Lifestyle & Food : Rice done differently
With all the talk late last year and in the early days of this one about plastic rice, it spawned various comments, claims, and counterclaims about the popular staple.
But just plain rice is no fun. There are ways to excite the taste buds without breaking the bank book.
1 ounce Anchor Butter, unsalted
2 ounces onion
1 ounce garlic
1 ounce scallion
1 teaspoon thyme
1 teaspoon pimento berries
1 teaspoon scotch bonnet pepper
2 ounces carrot, diced small
4 ounces pumpkin, diced small
2 cups water
1 ounce granulated sugar
1 teaspoon salt
2 fl oz Grace Coconut Milk
1 teaspoon curry powder
1 pound Grace White Rice
2 ounces Grace Green Peas
2 ounces Grace Whole Kernel Corn
In a pot, over a low flame, melt butter and sautÈ onion, garlic, scallion, thyme, pimento and scotch bonnet pepper for 2 minutes.
Add carrot and pumpkin and continue to cook for another 5 minutes.
Add water, sugar, salt, Grace Coconut Milk and curry powder. Wash rice and place in the pot; the water should just be enough to come 11/2 inches above the rice.
When liquid comes to a boil, reduce the flame to very low, cover pot with cling wrap and allow to steam.
Steam until grains have swollen and burst (about 30 minutes). When rice is finished, stir in the Grace Green Peas and Grace Whole Kernel Corn.

Grace Corned Beef Fried Rice
3 tablespoons Grace Vegetable Oil
3 large eggs, whisked
1 teaspoon ginger, minced
1 teaspoon garlic, minced
1 medium onion, chopped
1 can Grace Corned Beef, flaked
1/4 cup carrot, diced
1/4 cup green and red sweet peppers, chopped
3 stalks scallion, chopped
1 can Grace Whole Kernel Corn, drained
1 cup Grace Rice, cooked
1/4 cup soy sauce
1 teaspoon all-purpose seasoning
In a large skillet, heat one tablespoon Grace Vegetable Oil. Pour in the whisked eggs and scramble. Remove eggs and set aside.
Add remaining two tablespoons Grace Vegetable Oil to the skillet and sautÈ ginger, garlic, onion, Grace Corned Beef and toss well.
Add diced carrot, green and red sweet peppers, scallion and Grace Whole Kernel Corn, and toss well.
Add cooked rice, scrambled eggs, soy sauce and all-purpose seasoning, and toss well.
