Red Peas Stew

We are now in the season of Lent, which is a time celebrated by the Christian church. During Lent, it is said that you must avoid meat on all Fridays, Saturdays, and on Ash Wednesday.


8 cups water

2 cups dry red kidney beans

4 cloves garlic, crushed

6 whole pimento berries

1 can Grace Coconut Milk

1 medium carrot, sliced

2 large Irish potato, diced

1 medium chocho, diced

8 ounces dough

1 sprig thyme

2 stalks escallion, crushed

1 teaspoon salt

1/2 teaspoons Grace Caribbean Traditions Black Pepper


Pour water into a pot.

Wash red kidney beans and add to water, add crushed garlic and pimento berries, and boil until the beans are tender.

Pour in the Grace Coconut Milk, add carrots, Irish potatoes and chocho.

Use the dough to make very small spinners and add to the mixture.

Add the thyme, crushed scallion, salt and Grace Caribbean Traditions Black Pepper and simmer for about 10 minutes.
