CURRIED SEABEST CONCH RECIPE

As Jamaicans we love a good curry. Dating back from hundreds of years ago, curry dishes have become a staple on our menus and dinner tables. We are famous for currying anything - beef, chicken, goat, even mangoes! Well, Jamaican seafood distributor B&D Trawling, through its Sea Best brand, is encouraging you to try curried conch. Seafood in general is very easy to prepare as cooking time is usually very short. Seafood is also packed with minerals and vitamins necessary for a healthy body and lifetysle.

Today, we present Curried Sea Best Conch recipe.

INGREDIENTS:

n 2lb Sea Best conch, cleaned

n 2 stalks scallion, chopped

n 2 springs thyme

n 2 cloves garlic, minced

n 1 small onion, finely chopped

n 1/2 medium sweet pepper, finely chopped

n 1 tablespoon curry

n 1 tablespoon butter

n 1 tablespoon oil

n salt and pepper (Scotch bonnet pepper) to taste

METHOD:

Step 1: Scald the conch in saucepan with water for about five minutes. (This is done by boiling meat for about five minutes to make it easier to handle. It is usually a bit slimy, so by scalding it, the slime comes off.)

Step 2: Remove from saucepan and cut in small pieces, then rinse in a saucepan with fresh water.

Step 3: Add oil to saucepan and let heat under medium flame. Then add scallion, thyme, pepper, garlic and 1/2 tablespoon curry. Let cook in oil for two minutes.

Step 4: Add conch, onion, sweet pepper, salt, butter and remaining curry and stir for one minute. Allow to simmer until conch is tender and seasonings are absorbed. Serve hot alongside a bed of white rice or steamed vegetables.
