Using leftover ham after Christmas
Since you already spent so much time slaving over your Christmas dinner, there is no reason to spend hours using the leftovers to prepare a meal.
Ham is a staple in most Christmas dinners, and since it is already cooked and still very tasty, ham is the perfect leftover meat to use for another meal. It can be used for omelettes, quiche, sandwiches, pasta, fried rice, salad and wraps.
But remember, you must freeze the cooked ham after four days in order to store it for a longer time period. So the longer you have your ham, the longer you will have quite a few delicious leftover dishes.
This week's dish is the Ham Chef Salad courtesy of Grace Foods.
Ingredients
(For 7 servings)
n 1 clove garlic
n 1 large head of lettuce, washed
n 8 ounce cooked Grace Country Pride Ham, julienne
n 8 ounce cooked chicken or turkey breast, diced
n 8 ounce mild cheddar cheese
n 1/2 cup red sweet pepper, julienne
n 1/2 cup yellow sweet pepper, julienne
n 1/2 cup green sweet pepper, diced
n 2 small tomatoes, cut in wedges
n 2 large hard-boiled eggs, quartered
n 1/4 cup French dressing
n 1/4 cup croutons
Directions
1. Cut garlic and use to rub over the surface of a large salad bowl.
2. Tear lettuce leaves and place in the salad bowl.
3. Add the ham, chicken, cheese and peppers and toss lightly.
4. Arrange tomato wedges and hard-boiled eggs around the circumference of the salad bowl.
5. Sprinkle with French dressing, then garnish with croutons.
